Ingredients:

  • 2 beets
  • 1 onion
  • 400 g rhubarb
  • 2 cm fresh ginger root
  • 150 g sugar
  • 50 ml red wine vinegar
  • 1-star anise
  • 2 juniper berries
  • 1 clove bud
  • 2 tbsp. l. vegetable oil
  • Salt to taste

Cooking instructions:

  1. Wash the beets, wrap them in foil, and bake until tender for about 1 – 1.5 hours.
  2. Cut onion, rhubarb, ginger into small cubes. Fry onions and ginger in vegetable oil until transparent. Add the rhubarb and simmer until there is thoroughly cooked rhubarb and tender. Add vinegar, salt, and sugar.
  3. Crush star anise, juniper, and cloves in a mortar. Add spices to vegetables and simmer for 5 minutes.
  4. Peel and dice the beets.
  5. Put beets and vegetable mixture in a blender. Punch until smooth.
  6. After cooling down, transfer to jars.

Ingredients:

  • 500 g pitted plums
  • 2 onions
  • 1 cm ginger root
  • 1 red chili pepper
  • 3 cloves of garlic
  • 2 tbsp. sugar
  • 1⁄2 tbsp. sea ​​salt
  • 2 allspice peas
  • 3 boxes of cardamom
  • 4 black peppercorns
  • 1 cinnamon stick
  • 1-star anise
  • 2 tbsp. l. olive oil
  • 1⁄2 tsp coriander seed
  • 1 tsp honey

Cooking instructions:

  1. Heat all the spices in olive oil so that the spices will reveal their aroma. Add chopped onion and sauté until transparent, add chopped ginger and simmer for 5 minutes. Salt and add sugar, mix everything thoroughly, put plum, cut into pieces. Simmer for 20 minutes, covered, over low heat.
  2. Take out the cinnamon and star anise, place everything in a blender and beat until smooth.
  3. After cooling completely, place in jars.
